This is truly a must have pasta salad especially if you are Pinoy. This healthy pasta salad dish is a great way to use your leftover adobo.
- 2 cups cooked rigatoni
- 2 cups shredded red cabbage
- 1 cup coarsely chopped pork or chicken adobo left-over
- ½ cup sweet pickle relish
- ¾ cup Lady's Choice Real Mayonnaise
- 125 ml all purpose cream, chilled
- 2 tbsp diced red onion
- 1 tbsp red cane vinegar
- 1 tsp sesame oil
- salt and pepper to taste
- chopped spring onion for garnishing
1. In a bowl, combine sesame oil and red cane vinegar. Add red cabbage, a pinch of salt and pepper. Toss. Set aside.
2. In another bowl, mix rigatoni, ¾ cup of adobo, red onion, Lady's Choice Real Mayonnaise, all purpose cream, sweet pickle relish, a pinch of salt and pepper.
3. Spread red cabbage salad in a serving plate. Add the rigatoni mixture. Garnish with the remaining coarsely chopped adobo and spring onion.
4. Serve it warm or can be refrigerated for 1 hour before serving.
