Paella is one of those rich and savory dishes that we have always loved. This Paella Express is a fast yet flavorful rendition of the popular Paella Valenciana dish. It may be far from authentic but it is certainly delicious and memorable.
- 1 pack McCormick Menudo Meat Stew Seasoning Mix
- ½ tsp Club House Paprika
- 1 small red and green bell pepper, cubed
- 1½ cups water
- 1/3 cup cubed cooked ham
- 1 cup uncooked rice
- ½ cup cubed boneless, skinless chicken breast
- ¼ cup squid rings
- ¼ cup peeled & deveined shrimp
- ¼ cup frozen green peas
1. Dissolve McCormick Menudo Meat Stew Seasoning Mix and Club House Paprika in water.
2. In a large, deep frying pan, add rice and seasoning mixture.
3. Bring to a boil, reduce heat and simmer 10 minutes.
4. Add chicken and peppers; cook for 3 minutes.
5. Add squid, shrimp and ham. Cook for 2 minutes.
6. In the last minute of cooking, add peas and heat through.
