The original chutney was usually a relish made from fresh fruits and spices. These commercially made cooked chutneys are still popular in Great Britain, and are usually made of fruit (usually mangos, apples or pears), onions and raisins simmered with vinegar, brown sugar and spices for about two hours.
This Mango Ginger Chutney goes well with just about any cold or hot meats. Put this on anything. Fish, chicken, slices of cheese, toast, your finger. It's awesome.
- 1 cup mango, sliced into ½inch cubes
- 2 tbsp butter
- 2 tsp honey
- ½ tsp sherry vinegar
- 1 tsp ginger, finely diced about ¼inch
- 1 tsp yellow bell pepper , sliced into ¼inch cubes
- 1 cinnamon bark , 1inch long
- ½ piece star anise
1. Melt butter in a saucepan. Add the ginger, bell pepper, cinnamon bark and anise.
Saute for 2 minutes.
2. Add the mango cubes. Cook for about 5 minutes, stirring well. Add the honey and sherry vinegar.
