Love rice but want to keep it healthy? With its familiar flavor and inviting warmth, fried rice is a great comfort food. This simple vegetarian version of the dish comes together in just about the time it takes to cook rice, faster and healthier than delivery.
1 (14 ounce) package reduced-fat Firm Tofu; drained and cut into ½ inch cubes
2 large Eggs; lightly beaten
½ cup Green Onions; ½ inch thick slices
1 cup Frozen Peas and Carrots; thawed
¼ cup Baguio Beans; sliced into ¼ of inch
2 tbsp Vegetable Oil; divided
2 tbsp Lee Kum Kee Premium Soy Sauce
3 tsps Lee Kum Kee Panda Brand Oyster Sauce
½ tsp Lee Kum Kee Sesame Oil
4 cloves Garlic; minced
1. Cook rice
2. While the rice is cooking, heat 1 tbsp of vegetable oil in a large skillet over medium high heat. Add tofu. Cook for 4 minutes or until lightly browned. Remove from pan.
3. Add the eggs to the pan and cook until done, breaking the egg into small pieces. Remove from pan.
4. Add 1 tbsp of vegetable oil to the pan. Add the onions, peas, carrots, beans and garlic and sauté for 2 minutes. Then add Lee Kum Kee Premium Soy Sauce, Panda Brand Oyster Sauce and Lee Kum Kee Sesame Oil.
5. Add the cooked rice to the pan and cook for 2 minutes, stirring constantly. Add the tofu and egg and cook for 30 seconds, stirring constantly. Move to a serving plate and enjoy!
