- 1 kilo Monterey beef tenderloin, trimmed
- ½ cup Soy sauce
- 1½ tsp Black peppercorns, cracked
- 2 tbsp Cooking oil
- 1 tbsp Magnolia gold butter
- 4 pcs Garlic cloves, crushed
- 1 pc White onion, sliced into rings
- 1 pc Red bell pepper, cut into strips
- 1 pc Green bell pepper, cut into strips
- 1 pc Yellow bell pepper, cut into strips
- Juice from 12 pcs. fresh calamansi
- Fresh herbs (thyme, tarragon, rosemary) for garnish, optional
1. Slice beef into mignonettes and season with cracked black peppercorns.
2. Marinate mignonettes in soy sauce, garlic and calamansi juice for at least 10 minutes, set aside and cover.
3. In a pre-heated pan with oil, sear each mignonette over medium heat on both sides according to desired doneness. Set aside on a serving platter and keep warm and properly covered.
4. Reduce heat and pour the remaining marinade into the same pan.
5. Add Magnolia butter and stir to incorporate into the marinade.
6. Add onion rings and strips of bell peppers and toss.
7. Pour the sautéed vegetables over beef. Serve warm and garnish with fresh herbs, if desired.
