Chicken Estofado is one Filipino recipe where it becomes a favorite meal during fiestas. Without it , the table of food offered to visitors won't be complete.
- 1 kg Magnolia Whole Chicken chopped
- 1 cup chicken stock
- ¼ cup DARI CREAM CLASSIC
- ½ cup vinegar
- ¾ cup brown sugar
- 1 tbsp garlic
- 1 tbsp salt
- 5 tbsp soy sauce
- 2 tbsp cornstarch, mixed in ¾ cup water
- 1 pc banana, fried
- 3 pc potato, fried
- 3 pc bay leaf
- 2 pc bell pepper, sliced into strips
- 1 pc white onions
1. Saute garlic and chicken in oil. Add chicken stock and soy sauce then bring to a boil for ten minutes.
2. After the chicken mixture has boiled for ten minutes, add vinegar, bay leaves, salt, and sugar.
3. Mix in the cornstarch slurry and gradually add the bananas and potatoes.
4. Remove from heat and plate.
5. Top with bell peppers and sliced onions.
