This is a wonderful Honey-Cured Bacon Crunch Salad that offers a good alternative to regular salad. It has a good texture and wonderful taste.
- 4 strip Purefoods Honeycured Bacon, crumbled
- bunch Mesclun salad greens
- ¼ cup Olive oil
- ½ cup Magnolia All Purpose Cream
- ½ cup Walnuts or cashews (unsalted)
- 1 cup Fresh pineapple, cubed
- 1 pc Apple, cubed
- 1 pc Cucumber, cubed
- 1 pc Carrot, cubed
- 1 stalk Celery, cut into ½ inch pieces
- Juice from 1 lemon
- Spring onions for garnish
- Salt and pepper to taste
1. To make the salad dressing, combine lemon juice, olive oil and fresh cream.
2. Season with salt and white pepper. Chill before using.
3. Place all fruits and vegetables in a bowl and pour dressing over it.
4. Toss mixture and transfer to a salad bowl lined with mesclun greens.
5. Top with nuts, crumbled bacon and spring onions.
