Marinated Milkfish
Bangus plays a very important role in every sector of Philippine society – from being our national fish, a source of livelihood to our fisher folks, fish pond owners and caretakers, fish vendors and fish processors to becoming a plateful of healthy protein-source to every Filipino household.
- 1 whole milkfish (bangus)
- 3-4 tbsp vinegar
- 3-4 cloves garlic, minced and sliced finely
- salt and pepper to taste
- vegetable oil for frying
- sliced tomato pieces for garnish
1. Clean fish and cut lengthwise along its back.
2. Remove the fish skeletal bone and spread fish flat on a large platter. If desired, cut fish into serving pieces.
3. Mix garlic, vinegar, salt and pepper. Marinate fish with this mixture overnight placed in the refrigerator.
4. In a non-stick skillet over medium heat, pan-fry marinated fish in enough oil until cooked and browned on both sides.
5. Transfer to a serving platter. Garnish with sliced tomato pieces.
